Carrot Cake Inspired Breakfast Cookies

I created these carrot cake inspired breakfast cookies because I’ve been a little bit bored of my usual breakfast.   I made my first ever breakfast cookies a few weeks ago and wanted to come up with another flavour.  I also like to try and include veggies at each meal.  So I thought carrot cake cookies would be a good second flavour to try out.

While these don’t taste exactly like carrot cake the flavours have been inspired by it.  I like to eat a big breakfast to start my day so I will have one or two of these along side a green smoothie or two eggs.  What flavour do you guys want to see next?

Instructions
  1. Pre-heat the oven to 350 degrees. Line a cookie sheet with parchment paper.
  2. Shred the carrots (I did this with my food processor, but you can buy already shredded carrots). Melt the coconut oil. Chop walnuts finely.
  3. In a blender combine the frozen pineapple and 1/4 cup of water until pureed.
  4. Mix all ingredients together in a big bowl. The mixture should be slightly sticky.
  5. Scoop the mixture into balls and press into cookie shape. Each cookie should be about 2 Tbsp. Place on cookie sheet and bake for 25-30 minutes.

*Keep in the fridge up to three days or in the freezer for a few weeks
