Chocolate Sea Salt Granola Inspired by Purely Elizabeth
Chocolate and granola are two of my favourite things. When I first tried the Purely Elizabeth Chocolate Sea Salt Granola I was in heaven. But, once I realized how difficult it is to find in Toronto I knew I had to try and make a home made version. This way, I can eat it alllll of the time (which is slightly dangerous).
I wanted to share this recipe with all of you because I know there are many others who love the Purely Elizabeth Granola but can’t find it easily in the city. I hope you enjoy this as much as I do. It’s become a go-to recipe for me. I love to eat it as a snack when I’m craving something sweet, or sprinkle it on top of a smoothie bowl.
Chocolate Sea Salt Granola
Pre-heat the oven to 350F. Line a cookie sheet with parchment paper.
In a a food processor combine the oats, nuts, cacao powder, coconut flakes and sea salt. Pulse 5-6 times. Remove from food processor and add to a large mixing bowl.
Add the chia seeds and pumpkin seeds to the mixing bowl. Stir until well combined.
Place a saucepan over medium heat. Combine the coconut oil and coconut nectar. Stir consistently until well combined, then remove from heat.
Pour the wet mixture over the dry and mix until well combined. I like to pour the wet mixture over the dry in thirds to ensure the dry mixture is evenly coated.
Spread onto the cookie sheet and bake in the oven for 35-45 minutes. Let cool on the counter for an hour before storing in a container or jar.
To make this nut free simply omit the nuts and add more oats and seeds.
