Salmon Patties With A Twist

These are not your moms salmon patties.  Growing up, my mom made salmon patties pretty often but they were never a meal I enjoyed.  Mostly, because the canned salmon grossed me out.  Once I started cooking and groccery shopping for myself I realized that salmon patties make for a quick and easy meal thats also super filling.  I found a brand of canned salmon that I liked, Raincoast Trading.  There salmon is wild, there is no additives, and the cans are BPA free.

When I came up with this recipe I wanted to make them a little different than the traditional salmon patties which is why I added sweet potato.  I also like knowing that there are some hidden veggies in these!   I like to enjoy these overtop of a salad as my protein source.  But they can also be served like you would a traditional burger with all your favourite toppings and sides!

Instructions
  1. Pre-heat oven to 350F and line a cookie sheet with parchment paper.
  2. Slice green onion into small rounds.
  3. Mix all ingredients together in a medium size bowl until well combined.
  4. Scoop out about 2 Tbsp at a time and form into burger shaped patties.
  5. Place in the oven for about 25 minutes or until edges are crisp. Let burgers cool before serving.
