Refined Sugar Free Banana Spice Muffins

Sugar is everywhere.  It sneaks into just about everything from the obvious, like muffins, to unobvious, like salad dressing.  Throughout the day it is easy to consume double or triple the amount of sugar than we should be.  Muffins are often laden with sugar, yet they are a breakfast or snack of choice for many people.  This recipe has no added sugar, the sweetness only comes from the fruit that is used.

These muffins are a great grab-and-go breakfast or snack that won’t cause a dramatic spike in insulin levels.  This means you won’t crash shortly after eating one.

They are grain and gluten free as well as vegan.  These muffins use banana flour, which is a resistant starch.  This means it is incompletely digested and acts similarly to fibre, keeping you full for longer.  You can read more about banana flour here.

Instructions
  1. Preheat oven to 350F. Line muffin pan with muffin liners or grease.
  2. Mash ripe bananas in a bowl. Can leave some chunks. Chop walnuts. Set aside.
  3. Add all ingredients except walnuts to the bowl of bananas. Mix until combined. Then add in the walnuts reserving some to sprinkle on top.
  4. Pour batter into muffin pan. Then sprinkle remaining walnuts on top.
  5. Bake in oven for 25 minutes. Let cool before removing from pan.
Recipe Notes

** These muffins are very moist, for a drier muffin omit the liquid.
